A perfect dressing for a perfect salad

Peel and chop 3 garlic cloves. Put the garlic, 2 tsp's of dijon mustard,  2 tbsp of white wine vinegar and 6 tbsp of extra virgin olive oil into a empty and clean jam jar. Place the lid on tightly and shake. Put in the fridge for a hour or until needed and and then serve by drizzling it over a salad!!!

  • or simply just on a green salad 
really on whatever your into to !!!! 

For the days that your not really bothered to stand in the kitchen

                                    Tomato Spaghetti 


Ingredients

  • 3 garlic cloves 
  • 1 red chilli
  • A bunch of fresh basil 
  • 400g of spaghetti
  • 400g tin of chopped tomatoes
  • 100g parmesan
  • olive oil 
  • salt and pepper
To cook your pasta 

Bring a large pot of water to the boil and cook for about 15 mins or until its done.... In another pot pour in a good to lugs of the olive oil add the finely chopped garlic, chilli and basil stalks....when the garlic starts to brown add your basil leaves and tinned tomatoes..... Season with salt and pepper .... drain the spaghetti and add to the sauce and stir well.... Taste and add more salt and pepper if needed

To serve 

Share the pasta between bowls .... roughly tear the remaining basil leaves and grate some parmesan over the top..... 

Dinner in under 30 minutes!!!!!  

Homemade burgers perfect for the summer

Ingredients
12 cream crackers
8 sprigs of parsley
2 tps of dijon mustard
500g of minced beef
1 large egg
salt and pepper to season
olive oil


Preparing your burgers 
Smash up your crackers into small pieces i always find it best to use a tea towel and a rolling pin.. but them into a large bowl along with the minced beef, mustard and finely chopped parsley sprigs and then egg and the salt and pepper.. Now for the fun bit ... use your hands to mix everything well then divide into 6 individual burgers that are about 2cm thick... drizzle the burgers with olive oil and place on a plate... I always put them into the fridge for a hour before using them as it helps firm them up.

Cooking the burgers 
Depending whether you want to BBQ or fry your burgers .... I usually fry mine as it only takes about 4 minutes each side on a medium heat .. that also depends on how you like your burgers i like to cook mine so that there nicely brown with the tinniest of pink in the inside.

Serving your burger
Wash and dry some lettuce leaves .... slice some tomatoes ... peel and slice the red onion and add a few sliced gherkins .... Don't forget the lightly toasted burger buns
 *Know when it comes to sauce im not so crazy about tomato ketchup but i love to add some tomato chutney to my burger or BBQ sauce for a bit of a kick.

*This is also great with some homemade chips or a chopped salad
